At the end of a pretty paved courtyard near Place de la Bastille, the three-starred chef uses traditional methods to make tablets, ganaches, pralines and sweets, which are displayed under large glass-paneled showcases. For the pleasure of the eyes and taste buds!
The Chocolate Factory is first of all about the excellence of the raw product carefully selected in Brazil, Colombia, Peru or Venezuela for an original taste in a quest for the essential. Thanks to the love of a job well done and the machines adapted to artisanal production, this know-how is rediscovered in the laboratory.
Behind a large bay window, gourmands will salivate in front of the making of chocolate bars. From roasting to packaging, everything is done on site !
In a 320 m² rough and authentic setting, mixed with brick, glass and steel, you can buy "three star" chocolate just like its creator.
